i) The identity of strains of microbes should be investigated in these vegetables the strains of these microbes would be dangerous as to cause very serious infections probably known or unknown.
ii) Similar studies should be done on other vegetables includingCucubita pepo among others,theamount of β-carotene retained after dehydration is related to the levels contained in the freshsamples. Hence, vegetables with high β-carotene should be recommended for dehydration because the amount retained will be relatively high after drying.
