MARCO TEÓRICO

Burgundy is not one vineyard, but the name of a province which contains at least three of France's best.

By far the richest and most important is the Cote d'Or, in the center, composed of the Cote de Nuits and Cote de Beaune.

In Burgundy most of the land belongs to small farmers.The total production of fine wine in Bordeaux is often ten times that of Burgundy.

The Cote d'Or has a monopoly of the best red vineyards, and produces what its growers and about half the world besides, consider the finest red wine on earth.

Chambertin and Clos de Beze are often called the greatest wines of the whole region.

Chambertin is the wine for moments of great decision, or great joints of beef on the bone or other things that have plenty of flavour, character and savour of their own.

The Grand Cru of Chambolle Musigny is Le Musigny a slightly more delicate wine than Chambertin. The soft savoriness of Burgun dy come out in it more than in any other wine, in what French tasters call " the peacock's tail", flavours within flavours.

Clos Vougeot on the southern border of Chambolle is considered the claret of Burgundy. It is arkedly drier than most Burgundies , almost feminine,has the most beautiful scent in Burgund y with a faint suggestion of autumnal darness.

Grand Echezeaux and Bonnes Mares are probably the two least known of the world's greatest wines. The wine of the tiny vineyard of Romanee Conti has something almost oriental about its fragrance which makes it immediately recognizable. In the same Domaine, we find also Romanee St.Vivant, the biggest, not quite such a perfumed and splendid wine.

La Tache, which in truth is often better even than the most expensive and Le Richebourg,which also has its supporters for the crown.

Vosne Romanee les Beaumonts is very well known and of very high quality.Nuits St. Georges - Les St. George is a typical, soft, savory wine with plenty of meal in it.
