5B Resilience Gardens is a community wide collaboration, facilitated by Sun Valley Institute for Resilience, with the purpose of cultivating an inclusive local food community by increasing food literacy. Our mission is to provide every community member with the knowledge, resources and space to explore and experiment with growing their own food and engaging with more elements of the food system.
SPROUT Kits are provided to families in Blaine County with children preK-4th grade at
participating pre-schools and afterschool programs. The SPROUT kits are created by the I Have a Dream Foundation - Idaho, Ketchum Recreation Department, Wood River YMCA, Wood River Seed Library, University of Idaho Extension and the Sun Valley Institute for Resilience. Materials are provided by local businesses and farmers including Atkinsons’ Market, Ernie’s Organic, King’s Crown Organic, Kraay’s Market & Garden, Sunset Butte Organic, and Webb Nursery. Caliente una olla o cacerola grande a fuego medio en la estufa/cocina. Añada una cucharada de aceite o grasa de su elección (mantequilla, aceite de oliva, etc.).

Heat stock pot or large saucepan over medium heat on stovetop.
Add in 1 tablespoon your choice of oil or fat (butter, olive oil, etc.).
Add in onions and cook for 2-3 minutes. Add seasoning packet &
garlic, stirring often, and cook for 2-3 more minutes.
Add in squash and beans, then add in additional liquid (water or broth) to submerge all ingredients.
Bring to a boil, reduce heat, and simmer for 15-20 minutes, until the squash is soft.
Gentle mash or blend to your desired consistency.

Pay attention to the smell of the bread baking - as it gets closer to being done the

Add flour mix to food processor. With the machine running, add 1 ½ cups water through the feed tube.
Keep machine running until dough forms a ball on the side of the bowl. If mixing by hand, stir in water and mix together until a shaggy ball forms.
Begin kneading dough on a lightly floured surface.
Keep kneading until the dough is worked into a smooth ball, adding more water or flour if it gets too sticky or too dry.
Place the dough in a bowl and cover with a towel.
Let the dough rise until doubled in size, 3-4 hours.Once risen, knead the dough on a lightly floured surface to form a rounded loaf.
Prepare a kitchen towel by covering it with flour, then line a mixing bowl with it. Place the dough onto the kitchen towel. Cover with another towel and let rise for an additional 45 minutes.
Preheat the oven to 450 degrees F. Place the baking container or stone in the oven to preheat.
Place dough, seam side down, in preheated dutch oven or onto baking stone/sheet. Slash the dough with a sharp knife to keep the crust from cracking.
Add moisture, if necessary, as described in the recipe notes.
Bake for 40-45 minutes, rotating the pan halfway through. Remove from oven once crust is slightly browned or the internal temperature reaches 200 degrees F.
Cool on a rack for at least an hour. Slice & enjoy!

Flour contains added salt & yeast. This recipe is easiest using a food processor or stand mixer. You can mix this all by hand, if needed. For baking, this loaf can be placed on a baking sheet or stone, or inside of a dutch oven. If using a sheet or stone, add moisture to the oven to allow steam to form crust on bread. You can do this by adding water to a pan on the lower oven rack, add in ice cubes, or mist the oven. Using a dutch oven, or some type of closed baking dish, does this for you.

Prepare your pot with the provided soil. Dampen soil in preparation for seeding.
In a paper envelope, you received a few radish and arugula seeds. The radish seeds are bigger than the arugula. Radishes, growing a round root, needs more space that arugula, which is a leafy green.
Sow seeds in damp soil a ¼ inch deep and up to 1 inch apart.
Place pot in a sunny windowsill or below a light. Keep soil moist and germination should happen within 7 days.
Both plants are quick growing and should be edible in 3 weeks to a month. Arugula can be harvested by the leaf and will continue to grow until warmer
temperatures come in late spring. Radishes need to be harvested when the rounded root starts to show
through the soil surface. The leaves are edible too but best when cooked.
